Our Story

Born From a
Refusal to Compromise

Rebel Coffee started with a simple frustration: Billings deserved better coffee. Not the burnt, bitter kind that sits under a heat lamp all morning — the kind that makes you pause and actually taste something.

We opened our doors on 13th Street with a used espresso machine, a bag of green beans from a farmer we'd never met, and the stubborn belief that great coffee doesn't need a fancy neighborhood to exist. Three years later, that same stubbornness shows up in every cup we pull and every pastry we pull from the oven.

The Space

Natural light pours through large windows onto reclaimed wood counters. The seating shifts from bar-height for quick visits to corner nooks for long work sessions. It's loud enough to feel alive, quiet enough to think.

Mornings move fast — we've got your order before you finish your sentence. Afternoons slow down. That's when the pour-over rotates, the pastries get replenished, and the conversation starts.

We host monthly cuppings, rotate local art on our walls, and partner with Billings bakeries and farmers. When you pull up a chair here, you're part of something that doesn't feel corporate or generic — it feels like home.
